My Favorite Corned Beef Sandwich

I used to love this time of year for one thing and one thing only! The Reuben Panini! Rye bread, dressing, sauerkraut, cheese, and corned beef all melted together and crispy… What could be better than that? Well, I’ve discovered something just as good and when the heat of the desert is up, even better for my money!

It’s my own variation of The Cloak and Dagger with a simple substitution. Start with some rye or pumpernickle and add some mustard to both pieces of bread (I use a horseradish mustard sparingly). Stack corned beef, swiss cheese, and coleslaw close and cut in half. Now, I have to admit something here, I’ve had a longstanding love affair with the coleslaw from KFC and I think it works exceptionally well with this sandwich. Why? I’m pretty sure they use horseradish in it and that little kick only adds to the experience. 

Make sure you have some good kettle cooked chips with that sandwich and don’t forget the pickle! What was that? Oh, yes… You “must” have a nice cold beer with that too!
